At the center of every great adventure is food. A recent day trip, min-adventure to do some bass fishing in Southern California was no different.
As soon as we got off the water, it was time throw down in the back of the truck and whip up some viral smash tacos. Here is the recipe for the Kairos take on in this Instagram Gem.
Recipe:
- Toss the ground beef into a bowl and liberally coat it in Kairos Old Mexico Taco mix
- Heat up the flat top, cast iron, or whatever other cooking surface you have managed to come up with. Lay down some oil and let it get it hot. We have been loving the Zero Acre Cooking Oil that we snagged in our recent Windward Westward Box.
- Roll the seasoned meat in to 2 ½ inch balls.
- Place each ball on the hot flat top and set a 6-inch flour tortilla on top. Using your smashing tool, press down very firmly on top of each tortilla, smashing the meat until it is as thin as it goes.
- Let them cook for 1 minute, then press down on top of each tortilla again, which will get some of the fat out for the edges to cook in. Then let cook undisturbed for 2 to 3 minutes. Use a spatula to check for crispiness underneath.
- Flip smash burger tacos onto their tortilla side and let cook another 2 to 3 minutes so the tortilla can crisp up by cooking on the surface.
- Top with cheese, which will melt as the tortillas crisp.
- Remove and add burger sauce and toppings, then enjoy!
